There's a particular kind of afternoon that calls for this one — the sun's still out, but you need something with a bit of a kick. The Espresso Tonic solves that problem neatly: our Classic Tonic syrup, all quinine bitterness and citrus zest, meeting a shot of espresso poured slowly over ice. It's a coffee shop favourite that's been popping up on menus everywhere, and it's every bit as good made at home.
Ingredients
- Ice
- Soda water
- 30ml Classic Tonic syrup
- Two slices of lemon
- One shot of espresso
Method
- Fill a glass with ice, then top up with soda water, leaving a few centimetres at the top.
- Pour in the Classic Tonic syrup and drop in the lemon slices.
- Finish by slowly pouring the espresso shot over the lemon and ice, so it sits on top.
- Stir it or don't – your call!
