St Andrews Collins

The St Andrews Collins is a fresh take on a familiar favourite. Built on the bones of a classic Tom Collins and finished with St Andrews Limes Limonade instead of soda, it’s brighter, zestier, and a whole lot more refreshing. Easy to make, easy to drink, and perfect for warm afternoons that turn into long evenings.

Ingredients

  • 60 ml dry gin
  • 25 ml lemon juice
  • 15 ml Six Barrel Soda Simple Sugar Syrup
  • 50 ml Limonade
  • Ice
  • Skewered orange wheel & maraschino cherry, to garnish

Method

  1. Fill a shaker with ice.
  2. Add the gin, lemon juice, and Simple Sugar Syrup.
  3. Shake well until chilled.
  4. Strain into a Collins or highball glass filled with fresh ice.
  5. Top up with Limonade.
  6. Garnish with a skewered orange wheel and maraschino cherry, and serve.
